Kiritsuke, the universal kitchen knife for everyday use. The blade shape is similar to the Santoku knife, but has a higher and longer blade profile.
The blade is forged from W1 carbon steel and has undergone a partial hardening process – this means that not the entire blade is hardened evenly, but only the edge. The hardness of the blade reaches up to 60 HRC, which guarantees excellent cutting performance and long durability. The rest of the blade, especially the spine, remains softer and more flexible, making the knife more resistant to cracking and mechanical damage overall.
This traditional process also has an aesthetic result – the transition line between the hard and softer parts of the blade is clearly visible. This not only looks attractive, but also demonstrates precise craftsmanship.
Steel is not stainless, so it is important to take good care of the knife: always wash it after use, dry it and occasionally rub it with a thin layer of oil. Over time, the steel develops a natural patina that gives the knife a unique look while helping to protect the surface against corrosion.
