Yanagiba knife with one-sided hollow-cut for right-handed knife is a traditional Japanese knife designed especially for precise cutting of fish and sashimi preparation. It has a long and narrow blade, which is flat on one side and has a hollow cut (urasuki) on the other side, which ensures easier release of the cut ingredients from the blade. This single-sided cut is ideal for right-handed users, as it allows very precise and delicate cuts without the need to exert too much pressure. The Yanagiba knife is characterised by its sharpness and perfect control when working with fresh ingredients.

The blade is made of Swedish AEB-L stainless steel with a high hardness of 60-61 HRC. With this high hardness, the blade has an excellent and durable edge, but the knife must not be used to cut into bones or frozen food, as this risks damaging the blade.

The knife does not require any special care, just wash with water and wipe dry after use. Sharpening of the knife is best on water stones, do not hesitate to contact me if necessary.
